BODi Recipes: Sheet Pan Tofu Fajitas

This Sheet Pan Tofu Fajita recipe is a vegetarian take on fajitas and is low-carb, high-protein and super quick to prepare making it perfect for midweek dinners or lunch meal prep!

 

Ingredients:

450g firm tofu, cubed

2 Tbsp olive oil

2 large capsicums, sliced

1 large red onion, sliced

1/2 lime juice

 

1/8 paprika

1/2 Tbsp chilli powder

2 Tsp garlic powder

1 Tsp cumin

Salt & pepper

 

For guacamole:

1 avocado

1/2 red onion, finely diced

1/2 lime juice

Fresh coriander

 

Optional:

Corn tortillas

Salsa

 

Steps:

1. In a bowl, toss tofu, capsicum and onion with olive oil, lime juice and spices.

2. On a large lined baking tray, arrange the tofu, capsicum and onion. Bake for around 15 minutes at 180 degrees, or until tofu is golden and capsicums are tender.

3. Make up guacamole mashing avocado and adding in diced onion, a squeeze of lime juice and fresh coriander.

4. Serve with corn tortillas or on their own, and enjoy!
