BODi Recipes: Lime & Honey Cajun Salmon with Tomato Cauliflower Rice

This delicious recipe by Irena Macri is a flavour-packed, low-carb meal that is quick to prepare, super healthy and will have the whole family going back for more!



Salmon fillets (alternatively, you can sub in chicken breast or tofu)

Juice from 1 lime

1 1/2 Tsp of honey

1 Tbsp olive oil


Spice rub:

1 1/2 Tbsp Pre-made cajun spice rub, or:


1 Tsp onion powder

1 Tsp garlic powder

1 Tsp paprika

1 Tsp dried coriander

1 Tsp thyme

1/2 Tsp cayenne pepper

1/2 Tsp smoked paprika

1/2 Tsp salt

1/2 Tsp pepper


Tomato Cauliflower Rice:

1 Red onion, finely diced

1 Head of cauliflower, grated

1 Small carrot, finely diced

1 Large tomato 

2 Cloves of garlic, finely diced

1 Tsp paprika 

1/2 Tsp sea salt

Optional: Chilli flakes, shallots, coriander or parsley



1. Coat the salmon, chicken or tofu in the lime juice and honey and marinate in the fridge while preparing the other steps.

2. If preparing your own spice rub, mix together the spices in a bowl and set aside to cover the salmon, chicken or tofu in later.

3. To prepare the cauliflower rice, sauté the onion and garlic in a large pan with olive oil until cooked through, then add in the other ingredients and fry for 4-5 minutes, stirring through regularly, until the carrot, tomato and cauliflower are cooked through.

4. Finally, to cook the salmon, remove from the marinade and thoroughly coat both sides in the spice rub, then add to a preheated fry pan and cook in olive oil for 3 1/2 minutes on each side until blackened and crispy. If using chicken, ensure the centre is fully cooked through before removing from the heat.

Serve over cauliflower rice and enjoy!
