This low-carb, keto cauliflower great is a delicious side dish to a nice piece of meat or fish, or is a great replacement for potato bakes or salads. Not only is it tasty and low-carb, it is also super quick and easy to prepare!
1 Large cauliflower head
1/2 Cup of sour cream
2 Tbsp of whole milk
1 Cup of shredded cheese
1 Tsp dijon mustard
1 Tsp of garlic - finely diced or paste
2 rashers of bacon, finely chopped
A handful of finely sliced shallots
1 Tbsp olive oil
1. Preheat the oven to 180 degrees celsius. In a baking dish, arrange the cauliflower heads evenly, drizzle with olive oil and bake for 10 minutes.
2. In a bowl, mix together the sour cream, whole milk, dijon mustard, garlic and half the cheese. Remove the cauliflower from the oven and cover with the mixture, topping with the rest of the cheese. Put back into the oven and bake for another 10-15 minutes, or until the cheese is golden and the cauliflower is tender.
3. Remove from the oven and top with bacon and shallots, serve and enjoy!
