BODi Recipes: Healthy Banana Bread

The perfect breakfast or morning tea snack, this banana bread tastes as good as the original without the carbs or any added sugar! 



1 1/2 cup almond flour or ground almonds
1/2 cup mashed banana, very ripe
3 eggs large
2 tbsp butter, melted
1/4 cup granulated erythritol
2 tsp cinnamon
1 tsp baking powder
1/4 cup walnuts, crushed



1. Preheat the oven to 180 degrees and line a small baking tin.

2. In a medium sized bowl, beat together the banana, eggs and melted butter with an electric mixer until smooth. 

3. Add the dry ingredients into the mix, and stir well until combined. Fold in the walnuts, leaving some aside to top the banana bread with.

4. Pour the mixture into a baking tin and sprinkle with walnuts. Bake for around 40 minutes, or until the banana bread is golden and crispy on top, and a skewer comes out clean.
