BODi Recipes: Baked Zucchini Fries

Satisfy your craving for savoury snacks with these crispy, parmesan baked zucchini fries, with a delicious creamy lemon garlic mayo on the side.



2 large zucchinis, sliced 

1 egg

1 cup of parmesan cheese, grated

1 tsp garlic powder

1 tsp Italian herbs

1/2 cup of mayonnaise

Juice of 1 lemon

1 garlic clove, minced

Salt and pepper



1. Preheat the oven to 180 degrees and line a baking tray with paper. 

2. In a bowl, lightly whisk the egg. In a separate bowl, mix together the parmesan, garlic, Italian herbs and salt and pepper. Dip the zucchini strips into the egg and then cover generously in the parmesan. 

3. Arrange the zucchini strips on the tray and bake for 25-30 minutes or until golden and crispy, flipping halfway through.

4. While the zucchinis are baking, stir together the mayonnaise, lemon, garlic and salt and pepper and set aside for the fries.
