BODi Recipes: Healthy and Quick Work Lunches

Being time-poor at work is the easiest way to fall into the habit of picking up a quick takeaway from your local bakery or cafe, which can end up really adding up in calories! Here are our favourite quick, easy and super healthy lunch recipes that you can make ahead before busy days at work!

 

Kourtney Kardashians Creamy Avocado Salad:

Ingredients:

1 Avocado

1 Hard boiled egg

1 Large tomato

1 Tbsp of olive oil

1 Tsp of balsamic dressing

Salt and peppet

*Optional additions: 

1 can of tuna, or a handful of shredded chicken

 

Throw-Together Pesto Salad:

Ingredients:

1/2 Avocado

1 Cup of shredded chicken or 1 hard boiled egg

A handful of olives

1/2 Cup of tasty cheese, chopped into cubes

1 Tablespoon of pesto

1 Cup of spinach or rocket

 

Chicken and Guacamole:

Ingredients:

1 Chicken breast

1 Avocado, mashed

1 Large tomato, finely chopped

1/2 Red onion, finely chopped

Squeeze of lime juice

Salt and pepper

*Optional: A few sprigs of coriander finely chopped 

 

Healthy Tuna Salad:

Ingredients:

1 Can of tuna in spring water

1/2 Avocado, mashed

1 Tsp of olive oil

1/2 Cucumber, diced

1/2 Red Onion, diced

Salt and Pepper 

*Optional: a few sprigs of parsley or coriander finely chopped
