This indulgent take on Ferrero Rocher balls is a delicious, sugar-free version of the original, and is a perfect plate to take to parties or simply enjoy with the family throughout the festive season!
150g dark chocolate (70% cacao)
½ cup + 2 tbsp full fat coconut milk
¼ cup maple syrup
1 tsp of sea salt
¾ cup all-natural smooth hazelnut butter
1 cup roasted hazelnuts
A few drops of hazelnut extract or vanilla extract
1. Roughly chop the dark chocolate and melt in the microwave or over a double boiler over the stove until smooth and melted.
2. Warm the coconut milk over the stove or in the microwave and add slowly to the melted chocolate. Whisk until smooth and combined, then stir through the sea salt.
3. Whisk in the maple syrup, hazelnut butter and hazelnut or vanilla extra until combined.
4. Let the mixture cool to room temp, then let cool full in the fridge until its hardened. Set aside 20-25 whole hazelnuts and finely chop the rest. Scoop out even amounts of the mixture (about a soup spoon full) and roll around a whole hazelnut, then coat in chopped up hazelnuts and set aside in an airtight container in the fridge until ready to enjoy!
