This delicious, low-carb stuffing recipe has all the flavours of a traditional stuffing without the added carbs of bread or grains!
2 tbsp olive, avocado or coconut oil
3 cups brown onion, diced
2 cups celery, diced
1 cup mushrooms, diced
1 cup apple, cored and diced
¼ cup dried cranberries or dates, chopped
¼ cup parsley chopped
A few sprigs of thyme and sage
Salt and pepper
2 cups almond flour
3 eggs, whisked
Optional: 2-3 rashers of bacon or pancetta, diced
1. Preheat oven to 180 degrees. Heat oil in a large pan, and saute the onion, celery, mushrooms, apple, cranberries/dates, parsley, thyme, sage and salt and pepper for around 7 minutes or until cooked through.
2. Transfer the mixture to a greased baking dish. Fold through the bacon or pancetta if used. Stir in almond flour, then add the whisked eggs and stir well until combined.
3. Bake for 45 minutes to an hour until golden and crispy.
