Vegetarian Burritos



1 can black beans

1 can corn

250g brown rice (microwavable)

1 Tsp smoked paprika

1/2 Tsp cumin

2 Tsp fresh lime juice

1 avocado

1 red onion, diced

1 cup salsa

3 cups shredded lettuce

1/2 shredded cheese

1/2 cup sour cream

1 Jalapeño, sliced (if desired)

1 Tbsp olive oil

1 Tsp coriander



1. In a medium pan, saute the beans and corn with olive oil and spices and set aside.

2. In a bowl, mash the avocado and stir through onions, lime juice and coriander to create the guacamole. 

3. Assemble the burritos with the rice, beans and corn, guacamole, lettuce and top with salsa, sour cream, cheese and Jalapeños and coriander if desired.
