For some, Easter is a time for chocolate eggs, hot cross buns and hours spent at barbecues with family and friends. For others, it’s simply an extra two days off work to catch up on the latest Netflix series. However you’re planning on spending the Easter long weekend this year, here is a quick little recipe so that you are able to indulge and enjoy the festivities without fear of derailing your weight loss efforts!
TIP: Instead of turning down all the Easter eggs this long weekend, eat a few and substitute the rest for something a little healthier, like these delicious dark chocolate covered strawberries with a macadamia crumb.
One block of dark chocolate (70% or above)
A punnet of fresh strawberries
100g of macadamia or hazelnuts
Step One: Pick out a good quality dark chocolate above 70% (this will ensure you’re getting more of the antioxidants and less of the sugar). Our personal fave is Lindt 70%.
Step Two: Break up the chocolate into a microwave proof bowl and heat for 10 second intervals, stirring in between to avoid burning the chocolate. Alternatively, you can melt the chocolate over a double boiler, ensuring the water isn't touching the bottom of the bowl.
Step Three: Once melted and smooth, dip the fresh strawberries into the melted chocolate and lay on a tray. Finely chop up macadamias or hazelnuts and sprinkle over the strawberries before the melted chocolate sets.
