These low-carb chocolate muffins are full of protein, have no refined sugar, making them the perfect healthy snack to satisfy your sweet tooth! 😋
The ingredients you’ll need are:
¼ cup of BODi Post Workout protein powder
2 cups of almond flour
⅔ cup of unrefined coconut sugar
½ cup of cocoa powder
1 ½ tsp of baking powder
¼ tsp of himalayan sea salt
⅓ cup of coconut oil
½ cup of unsweetened almond milk
2 large eggs
A dash of vanilla essence
A handful of chopped almonds, walnuts or dark chocolate chips
Preheat the oven to 180C and either line or grease a muffin tray.
In a large bowl, combine the protein powder, almond flour, unrefined coconut sugar, cocoa powder, baking powder and sea salt, making sure all the dry ingredients are combined well.
Ensure the coconut oil is a liquid consistency and stir it into the dry ingredients, followed by the lightly whisked eggs, almond milk and vanilla essence. Make sure the wet ingredients are well combined with the dry ingredients, ensuring there are no lumps of flour. If the mixture appears too runny add some more almond flour, or if too dry add some more almond milk.
Finally, roughly chop the nuts or dark chocolate and gently fold into the mixture.
Fill each muffin cup nearly all the way up as the mixture won't rise too much when cooking.
Pop into the preheated oven for 25 to 30 minutes, or until the centre of the muffins comes out 'fudgy' but not too wet on a skewer or knife.
Set aside for 10 minutes to cool, and then enjoy! 😋
