Chickpea and Sweet Potato Breakfast Hash


4 sweet potatoes, cubed

1 large onion, diced

1 red capsicum, chopped

1 green capsicum, chopped

1 can of chickpeas

2 Tbsp olive oil

1 Tsp garlic powder

Salt and pepper

1 Avocado

4 fried eggs, if desired



1. Preheat the oven to 200 degrees celcius and line a baking tray with paper. 

2. Spread the potatoes, onion, capsicum and chickpeas evenly on the baking tray. Drizzle with olive oil and toss through with salt, pepper and garlic powder.

3. Bake for 20 minutes. Toss the ingredients and bake for another 20 minutes to cook evenly. 

4. Serve the hash with sliced avocado and top with fried eggs if desired.
